醉名廚出品的龍蝦湯製作過程十分講究,
先將龍蝦煮好後再撈起放入冰水冷卻,再將龍蝦拆肉,
保留頭內嘅膏待用,而蝦殼及蝦頭則放入180度焗爐烘香。
接着炒香紅蘿蔔、西芹等配料,再加入茄膏和烘好嘅龍蝦殼,
灒上白蘭地後點火燒香,然後加上鮮茄、香草,再注入清水慢火煮約2小時。
煮好後,便可將整煲湯連龍蝦殼一同攪拌至幼滑,隔渣後加入忌廉及龍蝦肉,
一啖鮮甜香醇的濃湯就完成了!每一啖都香濃而帶點回甘!
